THIS BLOGGERS RECIPE CONTEST HAS TWO CATEGORIES:
Appetizer Category: using either Karoun Labne or Gopi Paneer: $500.00 Cash Prize
Entree Category: using either Karoun Labne or Gopi Paneer: $500.00 Cash Prize
So what is Paneer Cheese?
Karoun Diaries explains their Gopi Paneer is a firm, pale cheese that is a high protein food that is often substituted for meat in many vegetarian entrees of Indian cuisine. It can also be deep fried, marinated, barbecued or used in sweet dessert.
Place a healthy two tablespoon scoop of filling on each triangle cut dough. Do a burrito style wrap and place on a baking sheet lined with parchment paper. Brush each roll with olive oil and sprinkle with cumin seeds.
Bake at 425 degrees for 20 minutes. These are best served hot with the cool Coconut Curry Honey Dip, but room temperature is still delicious.
Arrange on your favorite platter with a few sprigs of cilantro for color.

- 1/4 tsp. chili flakes
- 1/2 tsp. curry powder
- 2 oz. full fat coconut milk
- 2 tbsp. unsweetened shredded coconut flakes
- Paneer Filling:
- 1 tbsp. olive oil
- 1 large garlic clove, finely minced
- 1 tbsp. fresh grated ginger
- 1/4 cup shallots, minced
- 1-8oz. Gopi Paneer cheese, shredded
- 1/2 tsp. kosher salt
- 1/8 tsp. black pepper
- Other Ingredients needed:
- 1/4 cup minced cilantro
- 12 sheets frozen phyllo dough sheets, thawed
- 2 tbsp. olive oil
- 1 tsp. cumin seeds
Instructions
- In a small bowl, blend together the Coconut Curry Honey Dip ingredients. Refrigerate and then transfer to a dipping dish when ready to serve.
- In a small skillet, start the filling by heating the tablespoon of olive oil over medium high heat. Add in the minced garlic, grated ginger and minced shallots. Sauté for 2-3 minutes until soft. Remove from the skillet and allow too cool.
- In a mixing bowl, add in the shredded paneer cheese, minced cilantro and the cooled sautéed mixture. Toss to combine.
- Heat oven to 425 degrees and line a baking sheet with parchment paper.
- To create the triangle shaped roll, begin by stacking 3 sheets of phyllo dough. Cut the rectangle in half, then cut each half into a triangle shape. (Cover any unused sheets to stay fresh)
- On the wide end of the phyllo triangle, top with 2 tbsp of filling, roll like a burrito and place on the lined baking sheet.
- Brush all of the rolls with the 2 tbsp of olive oil and sprinkle with the cumin seeds.
