Creamy Poblano and Hominy Beer Cheese Soup
Creamy Poblano and Hominy Beer Cheese Soup is a creamy cheesy soup that is Mexican inspired as well as the non-alcoholic beer used in it. The lime and salt popcorn adds a fun garnish as well as flavor and crunch.
What’s that you see…popcorn on top of soup? Yeap! Funny thing is I grew up watching my parents sprinkle popcorn on top of their beer cheese soup they served at their restaurant. So, now when I make any kind of beer cheese soup, I immediately think about adding popcorn.
Is a non-alcoholic beer required?
No. You certainly can use a regular beer. I only recently started using a non-alcoholic beer to help reduce my alcohol intake. But most of theAlcohol regular beer will usually be cooked off anyway. This just happens to be one of the NA beers I keep in my refrigerator.
If you decide to use a different beer, try to choose one that you like drinking because of its flavor but I recommend you not add a stout or other dark beers. They may add a bitterness to the soup. My dad was a Budweiser drinker so they most likely added that. A lager is always a good choice.

Creamy Poblano and Hominy Beer Cheese Soup
Creamy Poblano and Hominy Cheese Soup is Mexican inspired as well as the non-alcoholic beer. The lime and salt popcorn adds a fun garnish.
Ingredients
- 4 cups chicken stock, (homemade and unsalted if possible)
- 2 tbs avocado oil
- 1/2 large onion chopped
- 4 cloves garlic, minced
- 1 large poblano charred, skin removed and chopped
- 29 oz. can White Hominy, drained
- 1 tbs ground cumin
- 1/2 tsp red pepper flakes
- 1 12oz. can Athletic Brewing Cerveza Atletica
- 20 oz. Velveeta cheese, cubed
- 1 cup Colby jack cheese, shredded
- S&P to taste
- 1/2 cup half and half
- 1 tbs corn starch
- 1/2 red bell pepper, small dice
- 1 bag Skinnygirl Lime & Salt popcorn (Orville Redenbacher’s)
- Cilantro sprigs for garnish
Instructions
- Heat oil and sauté the onion and garlic. Add in the poblano, hominy, cumin and red pepper flakes. Allow to cook to blend flavors. Add in the stock and the Athletic Brewing Cerveza Atletica.
- Allow it simmer and heat through. Add in the cubed Velveeta and shredded Colby cheese. Stir to melt and incorporate. Season with salt and pepper to taste. Mix together the half and half with the corn starch. Add to the soup and allow to heat through and thicken.
- Garnish with red bell pepper dices, hot popcorn and cilantro.
