It’s time to get cheesy and creamy in the house. I am excited to be 1 of 30 food bloggers to be chosen to compete in Karoun Dairies Recipe Challenge. The contest includes two products that were sent to each contestant, Original Labne Spread & Dip and Gopi Paneer. Cooking Mediterranean and Indian cuisine are some of my absolute favorite flavors.
I decided to start with an appetizer using their Labne Spread & Dip. If you use store brand yogurts or sour cream in your dishes you may want to rethink your choices. This Labne is amazingly thick and creamy and will blow you away.

Homemade Creamy Tomato Soup is always a wonderful appetizer to any meal, especially if the tomatoes are home grown. Choose your favorite tomato whether it is a red beef steak or a golden heirloom tomato. Simply pare boil to loosen and remove the skins and then dice.
Fresh herbs along with a dried herb, sautéed onion and minced garlic add a robust punch of flavor. The creamy texture comes when you blend the hot soup mixture with egg yolks and the Mediterranean Style Labne.
Herb flavored croutons, cracked black pepper, olive oil drops and fresh basil leaves are used as garnish on the top. A little more Labne is thinned to make a fun drizzle over the finished soup for the creme de la creme touch.
What kinds of tomatoes can be used?
You can use any ripe large tomato. It is best to remove the skin for a creamier texture.
Fresh home grown tomatoes will lend a rich and sweet flavor to the soup.
If you choose a yellow heirloom tomato for your soup you will have a beautiful golden color. Yum!!!
Yes, you can used canned tomatoes!! Taste your soup and season accordingly if it needs more sugar and salt to off set the canned flavor.

Creamy Tomato Labne Soup
Creamy Tomato Labne Soup makes the perfect starter to any meal. Use your favorite garden fresh tomatoes, simply peeled, diced, seasoned and cooked to perfection.
Ingredients
- 2 oz. butter
- 2 cups diced sweet onion
- 2 garlic cloves, minced
- 28 oz. fresh tomatoes, skin removed and diced (approximately 8 tomatoes, see notes)
- 3-4 sprigs of fresh thyme
- 1 tsp. dried oregano
- 2 cups chicken stock
- 1 tsp. kosher salt
- 1 tsp. sugar
- 1/4 tsp ground cumin
- 2 egg yolks, beaten
- 1/4 cup Karoun Labne plus 2 tbsp. for the drizzle
- 1/2 cup herb croutons
- 1/2 tsp. fresh cracked black pepper
- 1 tbsp. olive oil as a drip over the finished soup
- 8 small sprigs of fresh basil for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add in the diced onions and cook for several minutes to soften. Add in the minced garlic and continue to cook for another minute.
- Add in the diced tomatoes, thyme sprigs and dried oregano. Allow to cook for 3-4 minutes so the flavors blend.
- Add in the chicken stock, kosher salt, sugar and ground cumin. Allow to simmer for 10 minutes.
- Remove the thyme sprigs and transfer to a blender. Add in the egg yolks and blend to combine. Add in the 1/4 cup of Karoun Labne and blend until smooth.
- In a small bowl, blend the 2 tbsp. Karoun Labne with 1/2 tbsp. water until smooth. Transfer to a small ziplock storage bag and snip a small tip off the bag.
- Pour 4 serving bowls with the soup, garnish with the fresh cracked black pepper. Drop with the olive oil around the soup and drizzle with the thinned Labne in small amounts. Take a tooth pick and swipe through the Labne drizzle. Add in the croutons. Garnish with the basil leaves and enjoy!
