Green Tomato-Pineapple Pepper Jelly

Firm picked green tomatoes blended with fresh pineapple and jalapenos.

What a great surprise this jelly turned out to be. I came up with this recipe for a contest using green tomatoes.

Green Tomato-Pineapple Pepper Jelly

Makes 6 to 8 8oz jars

1 cup finely chopped jalapeno peppers, stems removed, seeds included for a lot of heat!
2 cups chopped green tomatoes, allowed to drain
2 cups chopped fresh pineapple, approximately 1 pound
1 large orange bell pepper, finely chopped
1 cup distilled white vinegar
5 cups sugar
6 oz liquid fruit pectin ( 2 pouches)

In blender or food processor, finely chop jalapenos and bell pepper. Place pepper mixture in a large pot or dutch oven. Cut green tomatoes and pineapple into large chunks. Using a blender or food processor again, pulse the green tomatoes and pineapple until they are chopped into small pieces but not pureed. Add green tomato mixture to pepper mixture. Add vinegar and bring to a boil over medium/high heat. Boil for 10 minutes, stirring continuously.
Add pectin and stir until well blended. Add sugar and stir until dissolved. Return to a boil. Continue to heat until a hard boil is reached then boil for another 2 minutes. Mixture will begin to thicken as it boils.
Remove from heat and skim foam. Ladle into sterilized jars leaving 1/8” headspace. Seal and process in boiling water bath for 5 minutes.

    Hi Cassi, thanks for the compliment, I purchased the page design from Woothemes.com From there I have been building it myself. I am learning as I go. It is taking me longer than it should but I do not have the finances to pay someone else right now. If I can do it, so can you!! Kim
