Honey Dijon Grape Chicken Salad

My testing with the Saucy Mama products they sent for the contest I was selected to participate in continues. I am a huge fan of Honey Dijon Dressing. I love making my own or buying it already made if I do not have the time to make it. Saucy Mama’s Honey Dijon Dressing is delicious. I knew it needed to be added to something sweet but savory.  I headed to my collection of handwritten recipes from my mother. My parents owned a restaurant most of my life and my mother still caterers today at 76 years old. Cooking is her passion too! I think she will do it until she no longer can stand. She copied boxes of her favorite recipes for me. I found a grape and walnut salad that sounded great. I decided to add chicken, fresh tarragon and Saucy Mama’s Honey Dijon Dressing. Fabulous salad. It was the perfect salad for a luncheon.

My second oldest daughter is getting married soon and it was time to get together and fine tune some of the details. But before the planning could start we had grilled artichokes that I tested earlier with Saucy Mama’s Four Leaf Balsamic Vinaigrette and Marinade along with the salad. Both the artichokes and Honey Dijon Grape Chicken Salad hit the spot. The luncheon was a success as well as the wedding cake tasting and planning. Wow, this wedding is coming fast.

Perfect salad for a luncheon. The crispy grapes and sweet Honey Dijon Dressing go so well with chicken and fresh tarragon. This salad can be made ahead so it frees up your prep and give you the time you want to host your get together.


  • 1 1/2 pounds red and green grapes, cut in half
  • 1 1/2 cups of diced celery
  • 4 cups diced cooked chicken breasts
  • 3/4 cups toasted chopped walnuts
  • 1/2 cup Saucy Mama's Honey Dijon Dressing
  • 1/4 cup mayonnaise
  • 2 tablespoons orange marmalade
  • 1 tablespoon fresh minced tarragon
  • salt and pepper to taste


  1. Poach and dice chicken breasts. (this recipe was made with 4 small breasts)
  2. Toast chopped walnuts in a dry skillet over medium high heat until lightly toasted. Nuts will begin to smell toasty when done. Toasting goes fast so watch them closely.
  3. Wash and slice the grapes in half the long way.
  4. Mince fresh tarragon.
  5. Combine all of the ingredients together. Refrigerate at least 4 hours. If the salad will be refrigerated longer than 4 hours leave out the walnuts and add them before serving.

    The salad sounds so delicious and bursting with flavor. I bet the addition of orange marmalade gives the dish a further depth!
