Phyllo mini shells take two. In January I entered my Spice Tuna Sushi Bites in Athen’s Mini Fillo Shells Make It Fancy and Fun Recipe Contest. It won!! I was chosen as one of 10 monthly winners. It was a cash prize. I love receiving money in the mail.

This hot entry was so fun and yummy but it did not make the top ten list. I did however serve them at a birthday party and everyone there loved them. When you bring home a clean plate, you have a good feeling. Find more recipes for mini fillo shells here.

Hot-to Trot Brownie Delights

This makes 30 mini filled shells. I forgot how much I love cinnamon ice cream. The crushed candy adds a bit of crunch to the ice cream. Using a pre-made brownie with frosting makes the recipe come together very fast.


  • 2 boxes Athens Mini Fillo shells
  • 8 oz Frosted Brownies- pre made in the bakery department
  • 4 cups vanilla ice cream, slightly softened
  • 2 oz cinnamon imperials, divided
  • 6 oz dark chocolate
  • 1 tsp vegetable shortening


  1. Finely crush 1 oz of the cinnamon imperials in a small food processor. Blend into the softened ice cream and return to the freezer.
  2. Remove fillo shells from the trays and fill each one with small piece of frosted brownie (approximately ½ in by ½ inch piece). Press the brownie into the shell and level it to the top edge of the shell.
  3. Scoop approximately 1 tablespoon of ice cream and place on top of the shell filled with the brownie. Return to the freezer as you are working on them to avoid melting. Allow to hard for several hours.
  4. Melt the chocolate and vegetable shortening together in the microwave, heat for 30 seconds at time until smooth. Pour into a pastry bag with a small tip or use a small ziplock bag with a tiny snip made in the corner of the bag to drizzle the chocolate over the frozen treats. Add a cinnamon imperial to each one and return to the freezer.
  5. Serve immediately when taken from the freezer.
