Hey TikTok, what do you think of my Korean Pasta Chips with Kimchi Cucumber Dip? A trending viral food snack that is made by baking/air frying cooked and seasoned pasta then served with a tasty dip. Yeap, they sure are crunchy and tasty.
Being apart of the Lucky Foods Bloggers Recipe Challenge had me thinking I needed to test this trend out and try it with the complimentary products that were sent to me from Lucky Foods for the challenge.

I grew up smelling and eating the sweet and savory meatballs and mini cocktail sausages that my mom would serve at her parties. Needless to say my first appetizer recipe entry is Korean Cocktail Meatballs. So amazing in flavor with a hint of heat and sweet. So where did Korean Pasta Chips with Kimchi Cucumber Dip evolve from?

CAN I USE DIFFERENT SHAPES OF PASTA?
Yes, another popular shape to use is bow tie pasta. I personally did not test this recipe with bow tie pasta. If you choose to do so, I would recommend watching the pasta as it may cook faster than the penne. Another pasta I saw used was rigatoni. All of them make for a fun twist for an appetizer.
I also tested these Korean Pasta Chips with long penne pasta and a shorter version. Both penne worked great. You can see the difference in the pictures above and below.
DO I HAVE TO OVEN BAKE MY KOREAN PASTA CHIPS?
No, you do not have to oven bake the pasta chips. There are many recipes out there that have air fryer instructions. I chose to use my oven since my air fry basket is pretty small and I would have to make the chips in batches. If your oven has a convection option, consider lowering the baking temperature by 25 degrees and let the circulation air flow assist in the baking process. (I’d use that option but my oven in my tiny house didn’t come with a convection option.)

Korean Pasta Chips with Kimchi Cucumber Dip
Korean Pasta Chips are a fun spin on a trending viral TikTok sensation. Penne pasta are cooked then tossed in a Korean sauce mixture made with Lucky Foods Kalbi Sauce, Lucky Foods Gochujang and olive oil.
Ingredients
- 8 oz. penne pasta
- 3 tbs. Lucky Foods Kalbi Sauce (Korean BBQ Marinade)
- 2 tsp. Lucky Foods Gochujang Paste (Korean Chili Pepper Paste)
- 2 tsp. olive oil
- 1/2 cup finely diced cucumber, peeled, seeds removed (1 tbs. set aside for garnish)
- 1/2 cup Lucky Foods Kimchi Mayo (Dipping Sauce and Condiment)
- Optional garnish: green onion top, sliced to create an open flower garnish
Instructions
- Wrap finely diced cucumbers in paper towels to help remove excessive moisture. Allow to sit for several minutes then squeeze the paper towels to help remove cucumber juices. Remove 1 tablespoon of the diced cucumber to use as garnish on the dip
- In a small bowl, blend together the Lucky Foods Kimchi Mayo and finely diced cucumber. Pour into a small dipping bowl to serve with pasta chips.
- Heat oven to 400 degrees.
- Make the Korean sauce mixture blending together the Lucky Foods Kalbi Sauce, Lucky Foods Gochujang Paste and olive oil. Set aside with pasta cooks.
- Cook the penne pasta according to the package directions. Drain and toss with the Korean sauce mixture.
- Spread onto a baking sheet that is lined with parchment paper. Bake for 10 minutes, then toss the pasta. Return to the oven and bake another 15-20 minutes, tossing and rotating the baking sheet as needed.
- As the pasta begins to bake, some may get done before others. These can be removed ahead from the baking sheet and set aside. Also some of the pasta will become wonderfully crispy and dark golden brown. These pasta add a fun extra crunch to the bowl.
- Some of the pasta may still feel somewhat soft but drying and harding will continue after the baking process.
- Allow the Korean Pasta Chips too cool. To serve, arrange the remaining tablespoon of diced cucumber on top of the dip. Tuck in the green onion flower if made.
- IF 🙂 you have leftover pasta chips, store them in an air tight container.
