I’m salsa dancing around the kitchen because I am 1 of 30 food bloggers to be accepted to take Sam’s Fresh Salsa recipe challenge. This is not my first time creating recipes for Sam’s Fresh Salsa. One of my entries from the past contest was THAI WATERMELON JICAMA GAZPACHO WITH SHRIMP AND LEMONGRASS CILANTRO RICE It was the perfect summer time dinner. This round I am starting with a simple, quick and easy hot meal, One Pot Mexican Pasta Dish, that can be made in less than 30 minutes. I’m game for less dishes too!

Every bite of this salsa screams fresh. The big chunks of veggies and peppers make a great time saver for prep that does not need to be done for this dish. I like saving time in the kitchen. How about you?
I grew up eating hot dishes and casseroles. I later continued to make similar meals for my 4 daughters. On a very tight pinch I would use that box of helper from the grocery shelves. Yeap, I sure did. LOL Sam’s Fresh Salsa is the helper in this delicious comfort food meal.
WHAT’S YOUR SPICE LEVEL?
This recipe uses Sam’s Fresh Salsa/medium. The companies mild salsa could easily be substituted if you want to lower the spice level. But honestly this dish is not overly spicy. Want it spicier? You could add some red pepper chili flakes or diced jalapeño during cooking.
Gather the ingredients and toppings and you are ready to get this dinner on the table in 30 minutes. Try using a leaner ground beef and not draining after browning. The flavor in the fat and juices will add more with out adding more ingredients.

One Pot Mexican Pasta Dish
One Pot Mexican Pasta Dish is your go to quick and delicious meal that is made in under 30 minutes. Sam's Fresh Salsa brings a punch of flavor and saves so much time to the prep of the dish.
Ingredients
- 2 tsp. ground cumin
- 1 tsp. kosher salt
- 1 tbs. chili powder
- 1/2 tsp. smoked paprika
- 1 lb. ground beef (I used 90/10 Angus)
- 1-16 oz. Sam’s Fresh Salsa (medium)
- 1-15 oz. can black beans, drained
- 1 cup frozen corn, thawed
- 3 cups beef broth
- 8 oz. dry rotini pasta
- 1-15 oz. can tomato sauce
- 1 cup shredded Mex-blend cheese
- Optional toppings:
- Sour cream
- Cilantro
- More shredded Mex-blend cheese
- Fresh sliced or pickled jalapeños
- Diced fresh avocado
- Fresh diced onion
- Sliced lime wedges
- Tortilla chips
Instructions
- In a small bowl, blend together the cumin, salt, chili powder and smoked paprika. Set aside.
- In a large Dutch oven pot, brown the hamburger over medium high heat until no longer pink. No need to drain. Add in the spice mixture over the browned hamburger and cook for several more minutes to blend the flavors together.
- Add in Sam’s Fresh Salsa and the tomato sauce, cook another minute.
- Now add in the black beans, corn and beef broth. Bring to a simmer and add in the pasta.
- Continue cooking for 10-13 minutes or until the pasta is tender. Stir in the 1 cup of shredded Mex-blend cheese until well blended.
- Serve and enjoy with any or all of the optional toppings.
