Peppercorn Steak & Beet Borscht is ready for serving! It’s challenge time and I’m excited to get cooking. I am one of thirty qualified bloggers who has been chosen to compete in the Kevin’s Natural Foods Recipe Challenge. Each of the products I received are carefully made and prepared using a gourmet cooking technique called “sous-vide”.
Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a bag, cooking the contents to a very precise temperature in a water bath. This technique creates results that are impossible to achieve through any other cooking method.

Peppercorn Steak Tips
I chose to work with Korean BBQ Style Chicken, Peppercorn Steak Tips, Roasted Garlic Chicken and Thai Style Coconut Chicken. First up, Peppercorn Steak Tips made into a quick version of a family favorite. This is my gluten free entry for the contest.
Small diced Yukon potatoes will cook quickly. If you want to reduce the carbohydrates you could substitute cauliflower for the potatoes. I like whole canned beets that are packed in salt and water only. When cut in half, each bite it the perfect size. You can however use canned dice beets to save some prep time.
Growing up in North Dakota, I ate my share of borscht soup. I love the flavors and comfort of a borscht. My version is a lot faster and a bit healthier than the one my grandma and mom made. They loved their heavy cream. I decided to leave it out and top the soup with a dobble of sour cream.
CAN I ADD OTHER INGREDIENTS FOR THE CREAMY TEXTURE?
Yes!! I think the base of the soup can handle many different kinds of ingredients to make it creamy.
- Heavy cream stirred in at the end will give the soup a velvety broth. Add in 1/4 cup or more as you desire.
- Sour cream will add a bit of creaminess along with a bit of tangy.
- Greek yogurt would make another great condiment.
Not all borscht soups include peas, potatoes and meat. It is more of a family region tradition when it comes to what is added. This soup leans more to the Ukrainian style with the added veggies and meat. Since this is a faster version of a borscht soup you will notice that it is not as deep red in color as a traditional version. Simmering raw beets brings out the rich red color. For the sake of time and ease I used canned whole beets cut in half.

Peppercorn Steak & Beet Broscht
Peppercorn Steak & Beet Borscht is a delicious fun and fast version of a Russian/Ukrainian sour soup made with Kevin's Natural Foods product.
Ingredients
- 1 16 oz. pkg. Kevin’s Natural Foods Peppercorn Steak Tips
- 2 tbs. avocado oil
- 1 1/2 cup baby Yukon Gold potatoes, small dice
- 2 cups cabbage, chopped
- 2 cups frozen peas and carrots, thawed
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 15 oz. can whole beets, packed in water and salt, liquid reserved, cut in half
- 4 cups beef stock
- 2 tbs. minced fresh dill plus dill sprigs for garnish
- 1/2 cup sour cream (2 tbs. each for garnish)
- Optional:
- *1/4 cup heavy cream added at the end of cooking
- *1 tbs. apple cider vinegar for extra tartness.
Instructions
- Open and drain the Peppercorn Steak Tips as instructed on the package then set aside. Place the sauce package aside and have ready to open and add as instructed below.
- In a Dutch oven, add the avocado oil and heat over medium high. Add in the diced potatoes, cabbage, peas and carrots. Season with 1 tsp. kosher salt and 1/2 tsp. black pepper. Cook for 3 minutes to soften.
- Add in the sliced whole beets with reserved liquid, drained Kevin’s Natural Foods Peppercorn Steak Tips and beef broth.
- Cover and simmer for 5 minutes. Add in the Kevin’s Natural Foods Peppercorn Steak Tip sauce package and the 2 tbs. minced fresh dill.
- Simmer to heat through and serve.
- Optional: add in the heavy cream and apple cider vinegar before serving.
