The recipe challenge has 2 categories and I plan to enter them both!

One Entree Category Winner: $250 Cash Prize
One Appetizer Category Winner: $250 Cash Prize
Three ingredients make up the rub that goes on the salmon. Our neighbor catch this lovely Chinook salmon and gave us these pieces. I hope you have someone that can bring you fresh caught fish for dinner. If not, just use your favorite variety of salmon for this recipe. The baking time will vary based on the thickness of the salmon cut.
Can I grill the salmon instead of baking it?
I did not test this recipe on the grill but I have cooked plenty of fish on the BBQ. I would recommend that you cook the salmon over indirect heat, meaning you don’t place them directly over the hot coals or flames.
Simple things like curly green scallion tops always add to a dish especially adding to the bites that include the onion. So you can’t go wrong with lots of curls.
