Bay Shrimp Louie with Sweet & Spicy Louie Dressing

When you live near the Pacific Northwest Coastal shores, you will always find a Shrimp Louie salad on the menu. If I am not ordering this then I am usually ordering a shrimp cocktail followed by local fish and chips. Yum! I think I need an other trip to the beach ASAP. But in the mean time I whipped up a fun twist on a Shrimp Louie salad.
Since I am 1 of 30 food bloggers who were accepted to compete in Miller’s Sweet & Spicy Banana Pepper Sauce recipe contest, I thought I’d use their Hot Banana Pepper sauce to make a delicious seafood Thousand Island dressing.

I’ve truly enjoyed creating new recipes using Miller’s sauces. As I handed out my samples to my taste testers, I keep hearing comments about how this product could be used in so many ways. They are all right!! The different heat levels really broaden the capabilities to satisfy many taste buds.
Miller’s Sweet & Spicy Banana Pepper Hot Sauce is a fantastic middle of the road heat, especially with the addition of the sweetness. It’s great as a dip of cooked shrimp, crispy chicken strips, wings and more.
I chose to use bay shrimp for this salad, also known as salad shrimp. Most commonly is it sold cooked, cleaned and ready to eat. I do like to look through the shrimp to remove any shells that made it into the mix. You certainly could use any size of shrimp with this salad. Keep the shrimp chilled until ready to serve. The addition of ingredients to the salad can also be changed up. Fresh sliced radish, chopped celery and fresh dill would also add a great touch.
A quick homemade Thousand Island dressing with a sweet and spicy spin. Prepared horseradish and Worcestershire sauce bring the needed flavors of a Thousand Island dressing. No need for ketchup or cocktail sauce in this dressing when Miller’s Sweet & Spicy Banana Pepper Hot Sauce is used.
Don’t just use this dressing on this Bay Shrimp Salad, serve it with chilled large cooked peeled shrimp. Spread it on a sandwich with corn beef and sauerkraut for a tasty Reuben sandwich.

Bay Shrimp Louie with Sweet & Spicy Louie Dressing
Serves 4
Dressing:
1/2 cup Miller’s Sweet & Spicy Banana Pepper Hot Sauce
1 cup mayonnaise
1 tsp. prepared horseradish
1 tsp. worcestershire sauce
1 tbs. lemon juice
Salad:
1 pound bay shrimp, cleaned and cooked
2 heads romaine lettuce, chopped
4 boiled eggs, peeled and cut into wedges
20 grape tomatoes, cut in half lengthwise
24 slices English cucumber
1 avocado, thinly sliced
1 lemon, cut into wedges
4 green onions, chopped
1 tsp. kosher salt
1/2 tsp. black pepper
Make the Sweet & Spicy Louie Dressing by mixing together all of the ingredients listed above for the dressing. Refrigerate until ready to serve.
Assembly the four salads by arranging the romaine lettuce first. Then place on 4 oz. of bay shrimp on each salad. Place around the tomatoes, sliced cucumbers, boiled eggs wedges and sliced avocado.
Drizzle each salad with some of the dressing, sprinkle on the chopped green onions, salt and pepper. Serve with a side of dressing and enjoy!
