Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a bag, cooking the contents to a very precise temperature in a water bath. This technique creates results that are impossible to achieve through any other cooking method.

Peppercorn Steak Tips
I chose to work with Korean BBQ Style Chicken, Peppercorn Steak Tips, Roasted Garlic Chicken and Thai Style Coconut Chicken. This round, Peppercorn Steak Tips are made into a quick version of a slow simmer Moroccan dish. This is my Paleo entry for the contest.
Kevin’s Natural Food does all of the slow simmer of the steak tips during the sous-vide method so you won’t have to. A little chopping of some fresh ingredients and you are on your way to Morocco.
My pro tip for cooking with fresh pearl onions: Bring a small saucepan of water to a boil. No need to salt the water. Cut the root end off of the pearl onions and boil for 1 minute. Strain and drop into cold water. You are now ready to peel.
Squeeze each onion so the peel slides off. So easy and so worth the step. If you have never had fresh pearl onions, please try them now. They are mild in onion flavor and slightly sweet. Just look at those pearls.
If fresh pearl onions are not available you can substitute frozen pearl onions that have been thawed.
So what’s up with the two tubers pictured above. One is orange and the other is white. Hmmmm! So many call each tuber by a different name. I’ll cut to the chase and tell you what I have come to know about each. The orange tuber is commonly called a yam and the white fleshed one is called a sweet potato. Stores are notorious for calling them both sweet potatoes. If you have grown up knowing them as something different, it’s ok. I just want you to know which tuber I used in this recipe…the white flesh sweet potato. Why, because the white fleshed sweet potato holds its shape more like a regular potato. I find yams to be more fiberous and cook into a very soft texture. But either way, both will work great and taste fabulous.

Moroccan Peppercorn Steak & Sweet Potato
Moroccan Peppercorn Steak & Sweet Potato is not only Paleo but it is super easy to make using Kevin's Natural Foods sous-vide Peppercorn Steak Tips.
Ingredients
- 1 16 oz. Pkg. Kevin’s Natural Foods Peppercorn Steak Tips
- 1/2 cup fresh pearl onions, blanched and peeled (see pro tip in the notes)
- 1 tbs avocado oil
- 1 1/4 cup white flesh sweet potatoes, small cubes
- 1 cup fresh green beans, trimmed and cut into 2” pieces
- 1/4 cup green olives, pitted (Castelvetrano olives used)
- 1 cup beef broth
- 1 preserved lemon, cut into wedges (seeds are edible)
- 1 tbs Ras el hanout spice blend
Instructions
- Open and drain the Peppercorn Steak Tips as instructed on the package then set aside. Place the sauce package aside and have ready to open and add as instructed below.
- In a skillet, add in the avocado oil and heat over medium high heat. Add in the dice sweet potato, green greens and pearl onions. Cook for 4-5 minutes.
- Add in the green olives, beef broth, preserved lemon wedges and the Ras el hanout spice blend, Kevin’s Peppercorn Steak Tips and sauce packet. Stir and bring to a simmer. Cook for an additional 5 minutes or until the sweet potato cubes are tender.
- Serve and enjoy!
