I’m always excited to be chosen to compete in a food bloggers recipe challenge. I am one of 30 to receive Miller’s Banana Pepper Sauces to create dishes for a game day/party dish and a healthy entree dish. Their sauces have been so fun to work with. This recipe is for their healthy entree category.
This soup is a flash back to another family favorite soup I have made for so many. The flavors are all there. It is a must try, fast and easy!. It also comes together in a short time but taste like you cooked for hours. Who doesn’t love a quick meal?

The Miller’s company sent all participants a variety of the sauces. The range from mild to habanero. So pick your heat level but honestly they are all fabulous.
Their sauces are made from banana peppers which is different than a hot sauce made from other peppers such as jalapeño. It provides a level of heat for everyone.
They have proof of their efforts, winning multiple awards for their sauces.
This soup is made with ingredients you can find at most grocery stores. If you can not find baby boy chow, spinach is a great substitute. But please do not skip the fish sauce, it adds an amazing umami that can not be duplicated.
The addition of cilantro is a flavor bomb but if you are not a cilantro fan, skip it or add parsley instead.
The Miller’s Banana Pepper sauce adds all the heat and sweet you need in this soup. It’s a one stop shop for flavor.
The coconut milk adds a creaminess to the soup that goes so well with the Miller’s Sauce.
Add a side of jasmine or basmati rice to the soup and you have a complete meal. Soooo soooo good.

Asian Shrimp and Coconut Soup
1 tablespoon oil
1 cup onion, chopped
1 cup red bell pepper, chopped
1 tablespoon fresh ginger, finely minced
2 garlic cloves, finely minced
1 tablespoon soy sauce
2 teaspoons fish sauce
1/4 cup Miller’s Sweet & Spicy Banana Pepper Habanero Sauce
2 cups vegetable broth
1-13.5 can coconut milk, full fat
12 oz 16-20 shrimp, peeled, deveined with tails removed
2 baby bok choy, chopped
2 tablespoons cilantro, chopped
Heat 1 tablespoon of oil in a Dutch oven over medium heat. Add in the onion, red bell pepper and ginger and sauté 3-4 minutes to soften. Add in the garlic and sauté another minute.
Add in the soy sauce, fish sauce and Miller’s Sweet & Spicy Banana Pepper Habanero Sauce, stir to blend in. Add in the vegetable broth and coconut milk, stir to blend in.
Heat the soup base to a simmer, then add in the shrimp and chopped baby bok choy. Simmer for several minutes more until the shrimp are cooked to opaque. Add in the cilantro and serve!
