Another wonderful appetizer that we served at my daughter’s wedding. I was able to make the dill flavored cream cheese ahead of time and then the morning of the wedding my family helped slice cucumbers, salmon and assemble. We stacked them in a foil tin container and layered them with parchment paper in between. They held up great for hours in the refrigerator.
I found a recipe online that I liked and adapted it to my taste. Here is the original recipe I found. I used a horseradish cream sauce and added onion powder and Worcestershire sauce. I found a great Nova Smoked Salmon that was smoked in Applewood. A little pricey but so good.
These classy bites were a big delight for salmon lovers. They were also a big hit with the wasps. Oh boy was that a chore for our servers to keep them away. We just made sure that our guests got through the food line quickly before the little pests took control. I would say that humans still won!!
Smoked Salmon Cucumber Bites
A classy appetizer to please any salmon lover. Leaving the skin on the cucumber gives an extra splash of color to the appetizer. Serving size will vary depending upon how many bites each person will be having and if other appetizers are being served.
Ingredients
- 4 oz. package of smoked salmon, generally found in the seafood dept.
- 2 English cucumber, cut on a slight angle,1/4 in. each cucumber yields approx 15-20 slices
- 8 oz. cream cheese, room temperature
- Fresh dill; 2 tablespoons of fresh dill, minced and some cut in small pieces for garnish
- 1/2 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1 tablespoon creamy horseradish sauce
Instructions
- Slice cucumbers and allow to set on a paper towel to absorb moisture.
- In a food processor, blend cream cheese, dill, salt, Worcestershire sauce, onion powder and creamy horseradish sauce until smooth.
- Spoon a teaspoon of cream cheese mixture on the cucumber slices.
- Open package of salmon. Remove a thin layer and slice into smaller strips to about 1" wide and 1 1/2" long. Gently folded the salmon over to put on top of cream cheese. Garnish with small pieces of cut dill.
