I know it’s only February but I was walking around the yard (before the unusual 12 inches of snow came) looking for life. Some of the blueberry bushes are showing lots of buds while others may have a down year. Whatever happens I will be making sauces, syrups, jams and bags of frozen blueberries for smoothies. This is a spiced blueberry sauce I came up with last year for some of my co-workers. They loved it over ice cream.

Spiced Blueberry Sauce
4 cups blueberries, fresh or frozen
¾ cup sugar
½ water
1 teaspoon of vanilla extract
2 tablespoons butter, optional
2 cardamom pods
1 star anise pod
Pinch of ground ginger, more if you like ginger.
Place all ingredients in a large sauce pan and bring to a simmer. Continue simmering the sauce as the blueberries break down and the sauce begins to thicken for approximately 20-30 minutes. Remove the cardamom and anise pods before serving. The sauce can be served warm or cold over goodies like sweet biscuits, ice cream or even pancakes. You decide!!
