Tarragon Shrimp Dijon
This recipe came about on a typical night of looking through the freezer and refrigerator to see what I have on hand. After deciding to make shrimp, I went to my herb garden and cut fresh tarragon which has become one of my favorites. I decided to also add Dijon mustard, white wine and cherry tomatoes.
Serves 2
- 18 medium shrimp peeled and thawed
- 1 tablespoon Dijon mustard
- 2 tablespoons Sherry Vinegar
- 1/2 cup white wine
- 2 tablespoons fresh tarragon, chopped
- 12 cherry tomatoes, whole
- 1 1/2 tablespoon olive oil
- 1 teaspoon fresh lemon zest
- 1 pinch salt or more to taste
In a medium skillet heat olive oil and sauté tomatoes until they begin to soften. Add shrimp and tarragon to the tomatoes, season with salt. Continue sautéing for a few minutes turning shrimp to cook thoroughly. Stir in white wine, sherry vinegar, Dijon mustard and lemon zest.
