Did you grow up being told to eat your vegetables? I was ok eating my parents cooking, EXCEPT their boiled frozen Brussel sprouts. I know many of you can imagine this disastrous side dish. Be assured I have learned how to cook a crispy seared Brussel that is paired with bacon. 🙂 My “Eat Your Greens Stir Fry” will take care of any worries you may have about getting your veggie intake.
I have the privilege of competing in JSL Foods Fortune Noodle Blogger Recipe Challenge. I get to #cooklikeawokstar and make some delicous new recipes that are all stir fry preparation. This recipe is loaded with green veggies that are paired with Fortune Yakisoba Stir Fry Teriyaki Noodle package.

Can I change up the green vegetables in the recipe?
Other fresh green vegetables that would go great in this stir fry are: sliced green bell peppers, shaved Brussel sprouts, shredded green cabbage, snap peas or sliced celery. It’s your green noodle stir fry so you decide.
Fried scallion tops are a flavor bomb that you do not want to skip in this recipe. Run a sharp paring knife down the scallion tops to make thin strips. Â Don’t be concerned if they spatter a bit when introduced to the oil. They contain moisture and it will cause a bit of splash.
Frying the scallion tops does two things, it makes a fabulous garnish as well as flavoring the cooking oil. It’s a great two for one kinda deal. I actually love the crispy scallion tops mixed into the dish. It’s an umami twist that is easy to produce.
After a quick prep of the ingredients, this dish comes together super fast. It is designed for two people but could be easily doubled for four. It’s also a great way to clean up the veggies sitting in your refrigerator.

Eat Your Greens Stir Fry
Eat Your Greens Stir Fry is exactly what is says. Powered by greens this Fortune Teriyaki Stir Fry packet delivers the flavor for just the right meal.
Ingredients
- 2 tbs, oil (I used avocado oil)
- 1 medium zucchini, julienne cut or spiralized
- 2 oz. snow peas, trimmed and cut (snap peas can be substituted)
- 4 scallions (white bottoms and green tops divided)
- 2 cups fresh green vegetables such as Swiss chard, baby kale, baby boy choy or spinach (see notes)
- 1 clove garlic, finely minced
- 1-7.7 oz. Fortune Yakisoba Teriyaki Stir Fry package
Instructions
- Cut the scallion white bottoms off and cut them on a diagonal. Set them aside. Take the green tops and run a knife down the tops to make thin slices.
- Chop all of the fresh green into bite size pieces. (Layer all of the greens on top of each other and roll them together. Slice them then continue to chop them into bite size)
- Warm the noodle packet by piercing the package and microwaving for 1 minutes. Set aside.
- In a small bowl, combine the seasoning packet from the noodle package with 1/2 cup of water and set aside.
- Add the oil to a wok or deep skillet. Heat over medium high then add in the thin cut scallion green tops to the hot oil and cook until dark golden brown and crispy. Remove from the oil and place on a paper towel to drain. Set aside to garnish the stir fry.
- Add the garlic to the scallion flavored oil and saute for 30 seconds to release the flavor but not darken.
- Toss in the zucchini, chopped fresh green vegetables, diagonally cut scallion whites and sauté for 3-4 minutes.
- Add in the noodles and sauce. Toss and continue to cook until well coated and combined.
- Plate the stir fry and garnish with the crispy golden brown scallion tops. Enjoy!!
