I got the word that I was accepted to be apart of the JSL Foods Fortune Noodle Blogger Recipe Challenge and I went straight to the kitchen to get noodling around. I have competed with JSL Foods multiple times and I am always delighted to use their products. Stir Fry is the big theme of this years contest with no rules. So why not start with Asian/Mexican fusion!

To aid in the creation of my original stir-fry recipes I received the following Fortune Noodle products:

Do I need to use pre-cooked rotisserie chicken?
If time allows for you to cook and shred your own chicken, go for it. I used a rotisserie chicken to make this recipe super easy and fast. I also love to keep the chicken bones to simmer and make a delicious stock for future meals. Nothing goes to waste even if I use a store bought pre-cooked ingredient.
How spicy is this Stir Fry?
Green Chili Chicken Stir Fry has a great kick of heat to it. If you want to reduce the heat level you can use less of the canned green chilies. If you want MORE heat, you can add in the second spice packet that comes along with the noodles. A key ingredient, the sour cream, helps calm the heat. You could increase the sour cream to also reduce the heat. You are the Chef Yaki in your kitchen and no rules apply!!

Green Chili Chicken Stir Fry
Green Chili Chicken Stir Fry is a delicious combination of Asian and Mexican flavors. The Fortune YakiSoba Noodle Stir Fry Hot & Spicy Noodle package truly brings the heat.
Ingredients
- 1/2 cup sliced onions
- 1 tbs. oil
- 4 oz. can fire roasted green chilies
- 1 cup sour cream
- 8 oz. rotisserie chicken, shredded
- 1/4 cup cilantro, chopped
- 1 tsp. ground cumin
- 1- 7.7 oz. Fortune YakiSoba Stir Fry Noodle Hot & Spicy package
- Garnish ingredients: lime wedges and Fresno chili pepper slices, cilantro sprigs
Instructions
- In a small bowl, mix together the green chilies, cumin, 1 Hot & Spice seasoning packet and 1/4 cup water. Set aside.
- Warm the noodle packet by piercing the package and microwaving for 1 minutes. Set aside.
- In a wok or large skillet over medium heat add in the oil and sauté the onions for 4-5 minutes or until softened and tender.
- Add in the shredded chicken and allow to heat through for several minutes.
- Toss in the noodles, seasoned sauce and stir to combine and heat through.
- Lastly add in the sour cream and cilantro, toss until combined.
- Plate, garnish and enjoy!!
