Noodles for breakfast, why not!! This is my required breakfast noodle stir fry entry, Yaki-Soba Egg in the Hole Breakfast Bowls for the JSL Foods Fortune Noodle Blogger Recipe Challenge. Over the years I have witnessed JSL Foods partnering to feed those in need. I admire that so much.
I have witnessed people in need when doing 5 mission trips to Haiti. It is not uncommon for Haitians to eat noodles with onions for breakfast. So when the challenge was presented I immediately thought of the children at the schools in Haiti eating noodles for breakfast. My heart is still there! Let’s bring this to the states and the blessed abundance that we have.
Egg in the Hole…I bet you had one growing up. Toast with a cut hole, an egg cooked in the opening. So so good, what great memories!!
To aid in the creation of my original stir-fry recipes I received the following Fortune Noodle products:
- 4 Teriyaki Yakisoba Stir-Fry Noodles
- 4 Soy Ginger Yakisoba Stir-Fry Noodles

If you look at my preparation cuts you will notice that they are all very uniform. I am not a trained chef, I just use a chopping tool that helps make the precise cuts I want. You can find the chopping tool at your local store. It’s a slap chop away from great cuts. LOL

Yaki-Soba Egg in the Hole Breakfast Bowls
Yaki-Soba Egg in the Hole Breakfast Bowls are a great way to start your day. FYI, dinner is great too.
Ingredients
- 5 large eggs, divided
- 2 cups (10 oz. ) shredded hash browns (refrigerated next to the eggs)
- 4 oz. boneless ham steak, small dice
- 1/4 cup each, green bell pepper, red bell pepper and onion
- 3 tbs. chives, minced and divided
- 3 tbs plus 4 tsp. oil, divided
- 1/2 tsp black sesame seeds
- 1 avocado, sliced
- 1 tbs. chopped cilantro
- 1-17.76 oz. Fortune Yaki-Soba Stir Fry Noodles with seasoning sauce base
- Optional: whole chives for garnish
Instructions
- Make the seasoned egg mixture: In a small bowl, combine 1/4 cup water, 2 seasoning packages from the Fortune Yaki-Soba Stir Fry Noodles package and 1 beaten egg. Set aside.
- In a wok or large skillet, heat 1 tbs. of oil over medium high heat. Add in the shredded potatoes and fry for 6-8 minutes. Allow the shredded potato to fry undisturbed to create a golden brown crust. While frying, drizzle with another 1 tbs. of oil on the top of the potatoes before flipping. Continue to fry for several minutes more then remove from the wok and set aside.
- Add 1 tbs. of oil to the wok/skillet and sauté the ham, bell peppers and onion for several minute to soften.
- Blend the golden hash browns and the ham/veggies together, 2 tbs. minced chives and 1 tbs. cilantro. Add in the seasoned egg mixture and blend well.
- Divide the hash brown egg mixture into 4 equal amounts.
- Add a quarter of the hash brown egg mixture to the wok/skillet. Move the center to create a hole. Drizzle 1 tsp of oil into the hole and add one whole egg. Cover and cook until a soft cooked egg is developed. Remove from the skillet and plate.
- Continue with the remaining ingredients until all four bowls are cooked.
- Top each egg bowl with black sesame seeds and serve the sliced avocado on the side.
- Top with optional whole chive if desired.
